Blythe is a mother, homeschool teacher, and masters prepared registered nurse. In 2012, after watching the documentary Forks Over Knives, she began learning about the profound impact of food choices on health and disease, and exploring how she might be able to help others understand the benefits of a whole foods plant-based diet. Blythe became certified in Plant Based Nutrition through the eCornell T. Colin Campbell Center for Nutrition Studies and began counseling patients.
Blythe and her husband were the founders of our monthly community meal events to bring together like-minded people to provide support and try new recipes. Blythe has been humbled by the impact of her efforts on members of our community, health restored and lives transformed!
